🍋 Lemon-Almond Crêpes with Orange

Ingredientes
- 150 g Wheat flour (Type 405)
- 3 Stück Eggs (Class M)
- 300 ml Whole milk
- 30 g Butter (melted)
- 30 g Powdered sugar
- 20 g Ground almonds
- 1 Stück Lemon (organic)
- 1 Stück Orange (organic)
Preparación
- 1. Mix the flour with 1 pinch of salt in a large bowl.
- 2. Add the eggs and beat them briefly with a whisk.
- 3. Pour in half of the milk while stirring.
- 4. Stir in the remaining milk and melted butter until no lumps remain.
- 5. Let the batter rest for 15 minutes.
- 6. Grate the zest of the orange and the lemon (only the colored skin).
- 7. Squeeze the juice of the orange and mix it into the crêpes.
- 8. Preheat a non-stick pan over medium heat and add a ladle of batter.
- 9. Fry the crêpe for approx. 1-2 minutes per side until golden brown.
- 10. Fill the crêpe with powdered sugar, ground almonds, and lemon juice.
- 11. Fold the crêpe into a quarter and serve warm.
