🥣 Leek Velouté with Melted Cheese

Ingredientes
- 3 Stück Leeks (stems), white and light green parts, sliced into rings
- 250 g Potatoes, peeled and diced
- 750 ml Vegetable broth
- 100 g Emmental or Gouda cheese, grated
- 20 g Butter
- 1 Prise Nutmeg, ground
- 1/2 TL Salt
- 1/2 TL Pepper
Preparación
- 1. Sweat the leek rings in the butter for 5 minutes until translucent.
- 2. Add the diced potatoes and vegetable broth. Let everything simmer for 15 minutes until the potatoes are cooked.
- 3. Puree the soup until smooth. Stir in the grated cheese until melted.
- 4. Season the soup with nutmeg, salt, and pepper and serve hot.
