🥗 Sweet Potato Bean Bowl

Ingredientes
- 2 Stk Sweet potato
- 1 Dose (400 g) Kidney beans (can)
- 1 Dose (200 g) Corn (can)
- 1 Stk Bell pepper (red)
- 100 g Yogurt (plain)
- 1 EL Olive oil
- 1 TL Paprika powder (sweet)
- 1 Prise Salt
Preparación
- 1. Wash the sweet potatoes and cut them into small cubes. Wash the bell pepper and cut it into cubes as well.
- 2. Mix the sweet potato and bell pepper cubes with the olive oil and paprika powder in a bowl.
- 3. Place the vegetables on a baking sheet and bake them in the preheated oven at 200 degrees for 15 minutes until crispy.
- 4. Rinse the kidney beans and corn in a sieve.
- 5. Take the vegetables out of the oven and mix them in a bowl with the drained beans and corn.
- 6. Serve the bowl with a dollop of yogurt on top and season to taste with salt.
