  2. 2. Heat the butter in a non-stick pan over medium heat. Don't forget to swirl the pan so you get an even layer of butter.
  3. 3. Pour in the egg mixture. Wait about 20 seconds until the edges start to set.
  4. 4. Take the pan off the heat and shake it vigorously back and forth. The eggs should stay creamy and slightly runny inside.
  5. 5. Scatter the chives and tarragon over one half of the omelet. Fold the other half over.
  6. 6. Carefully slide the omelet onto a warm plate and serve immediately. It should be golden brown and tender.
