  6. 6. Roll out the dough on the floured surface.
  7. 7. Grease the tart pan.
  8. 8. Place the dough in the pan.
  9. 9. Make sure the dough rises about three centimeters up the sides.
  10. 10. Prick the tart base several times with a fork.
  11. 11. Cover the base with baking paper.
  12. 12. Heavy the baking paper with dried peas or lentils.
  13. 13. Bake the base in the oven for about ten minutes.
  14. 14. Remove the base when it is golden brown.
  15. 15. Wash the lemon under hot water.
  16. 16. Grate about one teaspoon of lemon zest.

  18. 18. Squeeze the juice from the lemon.
