  1. 1. Preheat the oven to 175 degrees. Set the oven to top and bottom heat.
  2. 2. Separate the eggs. Carefully remove the egg yolk from the egg white.
  3. 3. Put the egg white and a pinch of salt in a bowl.
  4. 4. Whip the egg white stiff with a hand mixer. The mixture should form stiff peaks.
  5. 5. Put the egg yolks and sugar in a second bowl.
  6. 6. Whisk the egg yolks with the sugar for about 5 minutes until frothy.
  7. 7. Fold the stiffly whipped egg white into the egg yolk-sugar mixture spoonful by spoonful.
  8. 8. Sift flour, cornstarch, baking powder, and cocoa over the batter.
  9. 9. Stir the dry ingredients gently into the batter with a rubber spatula.
  10. 10. Line the bottom of a 28 cm springform pan with baking paper.
  11. 11. Pour the batter into the prepared pan.
  12. 12. Bake the cake in the oven for approx. 30 minutes.
  13. 13. Cover the surface with aluminum foil towards the end of the baking time if it gets too dark.
  14. 14. Let the cake cool completely on a wire rack.
  15. 15. Beat soft butter, icing sugar, vanilla sugar, and salt in a bowl until creamy.
  16. 16. Cut the cooled cake horizontally into three equally thick layers.
  17. 17. Distribute the buttercream evenly on each of the three cake layers.
  18. 18. Stack the layers on top of each other.
  19. 19. Coat the outside of the cake completely with the remaining cream.
  20. 20. Decorate the cake as you like with macarons, cinnamon stars, sugar sticks, and fruit.
