  1. 1. Separate the eggs. Save the egg whites for later.
  2. 2. Cut the butter into small cubes.
  3. 3. Put the butter cubes, the egg yolks, the sugar, the salt, the vanilla sugar, the flour and the baking powder into a bowl.
  4. 4. Work the ingredients into a smooth dough.
  5. 5. Divide the dough into two equal halves.
  6. 6. Mix one half with cocoa and one tablespoon of water.
  7. 7. Put both pieces of dough in the refrigerator for about 2 hours.
  8. 8. Preheat the oven to 175 °C top and bottom heat.
  9. 9. Sprinkle some flour on your work surface.
  10. 10. Shape the light dough into 5 rolls.
  11. 11. Shape the dark dough into 4 rolls.
  12. 12. Make sure the rolls are about 1 cm thick.
  13. 13. Place the rolls alternately in 3 rows on top of each other.
  14. 14. Make sure a chessboard pattern emerges.
  15. 15. Wrap the entire dough strand in cling film.
  16. 16. Put the dough strand back in the refrigerator for about 1 hour.
  17. 17. Cut the dough strand into slices of approx. 1 cm thick.
  18. 18. Place the cookies on a baking sheet lined with baking paper.
  19. 19. Bake the cookies for about 15 minutes in the oven.
  20. 20. Let the cookies cool.
  21. 21. Store the cookies in an airtight container.
