  1. 1. In a pot bring about 1 l water to a boil and cover. Put the eggs into the boiling water and cook for about 7 minutes. Then drain the eggs, shock them in cold water and peel. Then halve the eggs lengthwise and remove the yolks.
  2. 2. Press the yolks through a fine sieve and mix well in a bowl with mayonnaise and mustard.
  3. 3. Drain the gherkins and capers and chop finely. Wash the dill, pat dry, remove the coarse stems and chop finely as well. Halve a lemon and squeeze out the juice. Chop the anchovies finely.
  4. 4. Mix the gherkins, capers, anchovies and dill with the yolk mixture and season to taste with salt, pepper, chili and some lemon juice. Fill the mixture into a piping bag.
  5. 5. Place the egg halves with the cut side up on a plate and fill with the cream. Sprinkle the spicy Russian eggs with cayenne pepper and serve. Enjoy your meal!
