  1. 1. Preheat the oven to 180 °C (top/bottom heat). Separate the eggs. In a bowl, mix the egg yolks with the quark and 1 heaped tbsp. of cornstarch.
  2. 2. Whip the egg whites in a separate bowl until stiff, gradually sprinkling in 2 tbsp. of sugar. Then gently fold the egg whites into the quark mixture.
  3. 3. Grease 4 soufflé molds (each approx. 150 ml) and dust them with 1 tbsp. of sugar. Divide the soufflé mixture evenly among the molds. Place a baking sheet or an ovenproof pan with 1-2 cm of hot water in the oven, put the molds inside, and bake in a water bath for about 25–30 minutes.
  4. 4. Meanwhile, peel the pineapple, quarter it, remove the core, and dice the fruit. Wash the strawberries, remove the stems, and quarter them. Mix both in a bowl with apple sauce. Serve the quark soufflé with the marinated fruits. Enjoy your meal!
