🍳 Tortitas con Feta y Rúcula

Ingredientes
- Eggs 4 pcs
- Wheat flour, Type 405 200 g
- Salt pinch
- Milk 300 ml
- Oil 4 tbsp
- Arugula 100 g
- Feta 200 g
- Honey 1 tsp
- Pepper, black ground pinch
Preparación
- 1. Beat the eggs in a bowl and mix well. Add the flour and salt and mix everything well. Gradually pour in the milk and stir with a whisk until a smooth, slightly thick batter forms.
- 2. Heat 1 tablespoon of oil in a non-stick pan over medium heat. Pour a ladle of batter into the hot oil and spread it evenly by tilting the pan.
- 3. Bake the pancake for about 1–2 minutes until golden brown, until it becomes firm and releases from the bottom of the pan. Carefully flip and bake the other side for approx. 30 seconds until golden brown. Set the finished pancake aside and repeat the process with the remaining batter.
- 4. Wash the arugula thoroughly and drain. Crumble the feta with your hands and season with honey, salt and pepper. Fill the pancakes with feta and arugula as desired. Enjoy your meal!
