🍰 Pancakes con crema de ruibarbo

Ingredientes
- Eggs 4 pcs
- Sugar 7 tbsp
- Salt pinch
- Wheat flour, Type 405 300 g
- levadura en polvo 2 cdta
- Milk 200 ml
- Rhubarb 400 g
- Apple juice 100 ml
- nata para montar 200 g
- Yogurt, plain 4 tbsp
- Sunflower oil 3 tbsp
Preparación
- 1. Beat the eggs in a bowl and whisk with a hand mixer and whisk until the mixture gains significant volume.
- 2. Gradually fold in the sugar, salt, flour, and baking powder. Then stir in the milk until a slightly thick batter forms. Let the batter rest for about 10 minutes.
- 3. Peel the rhubarb, cut it into pieces, and bring it to a boil in a pot together with the apple juice and 4 tbsp of sugar. Cook over medium heat for about 5 minutes until the rhubarb breaks down slightly. Then let it cool.
- 4. In a bowl, whip the cream with a hand mixer until stiff. Then gently fold in the cold rhubarb and the yogurt.
- 5. Heat 1 tbsp of oil in a pan over high heat and distribute 2–3 tbsp of batter in the pan for small pancakes. Bake for approx. 2–3 minutes until small bubbles form on the surface, then flip and bake for another 1 minute until golden brown. Repeat the process with the remaining batter.
- 6. Serve the pancakes with the rhubarb cream. Enjoy your meal!
