🍽️ Crispy Lamb Loin Chops with Herb Crust and Pesto Mashed Potatoes

Ingredientes
- potatoes, floury 800 g
- salt pinch
- parsley, fresh 1 bunch
- butter 125 g
- lemons 1 pc.
- baguette 150 g
- egg yolk 1 pc.
- pepper, mixed pinch
- lamb loin 500 g
- rapeseed oil 1 tbsp
- cherry tomatoes 250 g
- thyme, fresh 10 g
- rosemary, fresh 10 g
- olive oil 1 tbsp
- ricotta-walnut pesto 2 tbsp
Preparación
- 1. Peel the potatoes and cut them into small cubes.
- 2. Place the potato cubes in a pot with salted water.
- 3. Bring the water to a boil and cook the potatoes on medium heat for about 20 minutes until tender.
- 4. Wash the parsley and shake it dry.
- 5. Finely chop the parsley.
- 6. Place 100 grams of soft butter in a bowl.
- 7. Beat the butter with a hand mixer until creamy.
- 8. Wash the lemon with hot water and dry it.
- 9. Finely grate the lemon zest.
- 10. Grind the baguette in a food processor until it forms fine crumbs.
- 11. Mix the beaten butter, parsley, egg yolk, lemon zest, and baguette crumbs together in a bowl.
- 12. Season the mixture with salt and pepper.
- 13. Preheat the oven to 120 degrees Celsius (top and bottom heat).
- 14. Line a baking tray with baking paper.
- 15. Pat the lamb loins dry with kitchen paper.
- 16. Heat rapeseed oil in a non-stick pan.
- 17. Sear the lamb loins for about 1 minute on each side.
- 18. Place the seared lamb loins on the prepared baking tray.
- 19. Evenly distribute the herb crumb mixture over the lamb loins.
- 20. Press the crust down slightly so it sticks.
- 21. Wash the cherry tomatoes and dry them.
- 22. Wash the thyme and rosemary and shake them dry.
- 23. Finely chop the thyme and rosemary.
- 24. Mix the chopped herbs with the tomatoes and a little olive oil.
- 25. Place the tomato mixture on the baking tray next to the lamb loins.
- 26. Finish cooking the lamb loins in the oven for about 15 minutes.
- 27. Drain the potatoes using the lid.
- 28. Mash the potatoes in the pot with a potato masher to make mashed potatoes.
- 29. Stir 25 grams of butter and pesto into the mashed potatoes.
- 30. Season the mashed potatoes with salt.
