  1. 1. In a large pot, bring about 4 liters of salted water to a boil. Preheat the oven to 80 °C (convection). Peel the onions and slice or shave them into thin rings.
  2. 2. In a pot, heat oil and butter with a little salt over medium heat. Add the onions and simmer covered on low heat for about 15 minutes. Stir occasionally and make sure they don't get too dark.
  3. 3. Cook the spätzle in the boiling salted water for around 6–8 minutes, until they rise to the surface. Then drain them in a colander, let them drip dry for a moment, and mix them in the same pot with the grated cheese and a pinch of nutmeg. Keep the pot covered in the oven until the cheese has melted.
  4. 4. In the meantime, tear the ham into small pieces by hand, add it to the onions, and warm for about 1–2 minutes. Wash the chives, shake them well to dry, and cut them into fine rings.
  5. 5. As soon as the cheese has melted, mix the spätzle thoroughly and season to taste with salt and pepper. Serve immediately on plates, garnished with onions, ham, and chives. Enjoy your meal!
