  3. 3. Whip the egg white in a bowl with a hand mixer and a whisk until stiff.
  4. 4. Slowly stir in 75 grams of sugar into the egg white.
  5. 5. Continue beating until the egg white looks creamy and shiny.
  6. 6. Take another bowl and beat the yolk with the remaining sugar and a pinch of salt until creamy for about 5 minutes.
  7. 7. Mix flour, starch, and baking powder in a separate bowl.
  8. 8. Sift the flour mixture over the yolk mixture.
  9. 9. Gently fold in half of the egg white into the mixture.
  10. 10. Quickly fold in the remaining egg white.
  11. 11. Pour the batter into a greased springform pan.
  12. 12. Bake the cake in the oven for approx. 25 minutes until golden yellow.
  13. 13. Then let the cake base cool down completely.
  14. 14. Cut the cooled base into three equal parts.
  15. 15. Wash the lemon thoroughly.
  16. 16. Grate about 1 teaspoon of the zest finely.
  17. 17. Beat the cream cheese in a bowl with a hand mixer until frothy.
  18. 18. Gradually add icing sugar, food coloring, and the lemon zest.
  19. 19. Spread one quarter of the cream over the first cake base.
  20. 20. Place the second cake base on top.
  21. 21. Spread this second base with another quarter of the cream as well.
  22. 22. Place the third and final cake base on top.
  23. 23. Cover the entire cake with the remaining cream.
  24. 24. Decorate the green cake for unidades Patrick's Day with green chocolate lentils or sugar sprinkles.
