🍳 Spring Toast with Asparagus and Fried Tofu

Ingredientes
- Basil, fresh 20 g
- Garlic cloves 1 pc
- Margarine, vegan 6 tbsp
- Salt pinch
- Pepper, black ground pinch
- Green asparagus 1 bunch
- Smoked tofu 0.5 pc
- Oil 2 tbsp
- Agave syrup 1 tsp
- Rye bread 4 slices
Preparación
- 1. Wash the basilica thoroughly and shake it dry. Pluck the leaves from the stems. Peel the garlic cloves. Put the basilica leaves, the garlic, and five tablespoons of margarine in a tall container. Puree the mixture with a hand blender into a fine paste. Season the paste with salt and pepper.
- 2. Peel the lower third of the asparagus. Break off the woody ends. Cut the tofu into small cubes.
- 3. Heat a pan with one tablespoon of oil on high heat. Fry the asparagus for about five minutes. Season the asparagus with salt and pepper. Remove the asparagus from the pan and place it on a plate. Heat another tablespoon of oil in the pan. Fry the tofu for about two minutes. Add one teaspoon of agave syrup and shake the pan briefly. Season the tofu with salt and pepper. Remove the tofu from the pan and place it on a plate.
- 4. Heat the pan again with one tablespoon of margarine on medium heat. Toast the bread on both sides for about two minutes until golden brown.
- 5. Spread the warm toast with the basilica margarine. Top the bread with the fried asparagus and the tofu. Season everything again with salt and pepper. Serve the toast. Enjoy your meal!
