🍰 Rollo de bizcocho de tiramisú de manzana

Ingredientes
- Eggs 4 pcs.
- Sugar 120 g
- Vanilla extract 2 tsp
- Salt 1 tsp
- Wheat flour, Type 405 100 g
- Apples, green 400 g
- Amaretto 2 tbsp
- Cranberries, dried 50 g
- Cinnamon 1 tsp
- Lemons 1 pcs.
- Mascarpone 500 g
- azúcar glas 80 g
- Lemon paste 1 tsp
- nata para montar 400 g
- San-apart 9 tsp
- Cocoa powder pinch
- Chocolate stars 10 pcs.
Preparación
- 1. Preheat the oven to 210 degrees top/bottom heat.
- 2. Line a baking sheet with baking paper.
- 3. Place a baking frame the size of the sheet and put it on the prepared sheet.
- 4. Mix the eggs with 100 grams of sugar, one teaspoon of vanilla extract and a pinch of salt.
- 5. Whip the mixture for about 10 minutes until it is white and creamy.
- 6. Sift 100 grams of flour over the egg mixture.
- 7. Gently fold in the flour without beating the air out of the mixture.
- 8. Distribute the dough evenly in the baking frame.
- 9. Smooth the surface of the dough.
- 10. Bake the sponge cake for 8 to 9 minutes in the preheated oven.
- 11. Take the cake out of the oven.
- 12. Immediately release the sponge from the hot sheet and remove the baking frame.
- 13. Invert the sponge onto a work surface and let it cool.
- 14. Cut the lemon in half and squeeze out the juice.
- 15. Let 2 tablespoons of sugar caramelize in a pan.
- 16. Cut the apples into small cubes.
- 17. Add the apple cubes to the caramelized sugar mixture.
- 18. Fry the apples for a few minutes until they take on color.
- 19. Deglaze the apples with Amaretto.
- 20. Add the cranberries, cinnamon and lemon juice.
- 21. Let the baked apple filling simmer briefly.
- 22. Set the filling aside to cool.
- 23. Mix mascarpone, icing sugar, one teaspoon of vanilla extract and lemon paste until creamy.
- 24. Slowly add the cream to the mascarpone mixture.
- 25. Whip the cream with cream stabilizer until stiff.
- 26. Spread the mascarpone cream on the cooled sponge cake.
- 27. Distribute the cooled baked apple filling on the cream.
- 28. Roll the sponge cake tightly using a kitchen towel.
- 29. Place the roll in the refrigerator for about half an hour.
- 30. Take the roll out of the refrigerator.
- 31. Place the roll on a serving plate.
- 32. Dust the roll with cocoa before serving.
- 33. Decorate the roll with chocolate stars.
