  1. 1. Preheat the oven to 175 °C (convection). In a bowl, beat 4 eggs, 300 g sugar, and vanilla sugar with a hand mixer and whisk until frothy. Add cinnamon, salt, rum, and beet syrup. Mix flour, cocoa powder, and baking powder and fold it in, then stir in the almonds.
  2. 2. Grease a baking sheet and sprinkle flour over it. Spread the dough evenly on it. Bake in the oven for about 15 minutes.
  3. 3. Cut the lemon in half and squeeze the juice. Separate the remaining 2 eggs and beat the egg whites with 100 g sugar in the cleaned bowl until frothy. Dilute it to taste with lemon juice.
  4. 4. Let the Berlin bread cool slightly, turn it out onto a board, and brush it while still warm with the icing. After cooling, cut into diamonds and serve. Enjoy your meal!
