🥘 Golden Turmeric Chickpea Bowl with Quinoa

Ingredientes
- 200 g Whole grain quinoa
- 400 g Chickpeas (can)
- 300 g Sweet potato
- 250 g Broccoli
- 30 ml Olive oil
- 2 Teelöffel Turmeric powder
- 500 ml Vegetable broth
- 1 Stück Lemon
Preparación
- 1. Rinse the quinoa under cold water and cook it in the vegetable broth according to the package instructions.
- 2. Wash the sweet potato, peel it, and cut it into small cubes. Toss them with half of the olive oil and half of the turmeric.
- 3. Drain and dry the chickpeas. Toss them with the remaining half of the olive oil and the remaining half of the turmeric.
- 4. Preheat the oven to 200 degrees Celsius. Line a baking sheet with parchment paper and spread the sweet potatoes and chickpeas on it.
- 5. Roast the sweet potatoes and chickpeas in the oven for 25 minutes until golden brown and tender.
- 6. Wash the broccoli and separate it into small florets. Steam the florets in a pot with a little water for 5 minutes until al dente.
- 7. Squeeze the juice of the lemon over the finished bowl and serve warm or cold.
