  1. 1. Peel the white asparagus thoroughly. Rinse it under running water. Cut off the woody lower ends.
  2. 2. Wash the potatoes very well. Cut them in half or quarters depending on their size.
  3. 3. Put the potatoes in a bowl. Add 2 tablespoons of oil, curry powder, salt, and pepper. Mix everything well.
  4. 4. Place the seasoned potatoes on a baking sheet.
  5. 5. Preheat the oven. Set it to 200 degrees conventional heat. If using fan-forced air, set it to 180 degrees. For gas ovens, set it to level 3.
  6. 6. Bake the potatoes in the oven for 35 minutes. Make sure they turn golden brown.
  7. 7. Turn the potatoes occasionally during the baking time so they brown evenly.
  8. 8. Bring water to a boil in a pot. Add salt and 1 tablespoon of honey.
  9. 9. Add the prepared asparagus to the boiling water.
  10. 10. Reduce the heat to low. Cook the asparagus for 10 to 12 minutes.
  11. 11. The asparagus should still have a slight bite. Do not cook it too soft.
  12. 12. Rinse an orange under hot water. Dry it thoroughly.
  13. 13. Grate the orange peel finely. Squeeze the juice out of the orange.
  14. 14. Take a passion fruit. Cut it in half.
  15. 15. Scoop out the pulp of the passion fruit. Put it into a small bowl.
  16. 16. Add the orange juice and orange zest to the passion fruit.
  17. 17. Add the remaining honey, mustard, vinegar, remaining oil, salt, and pepper to the bowl.
  18. 18. Whisk all the ingredients for the dressing well together.
  19. 19. Take the asparagus out of the water. Let it drain well.
  20. 20. Place the asparagus in a shallow dish.
  21. 21. Pour the passion fruit dressing over the asparagus.
  22. 22. Let the asparagus marinate in the dressing for 10 minutes.
  23. 23. Clean the spring onions. Wash them.
  24. 24. Cut the spring onions into thin rings.
  25. 25. Sprinkle the spring onion rings over the marinated asparagus.
  26. 26. Serve the asparagus together with the baked curry potatoes.
