  2. 2. Wash the leek thoroughly and remove the hard ends.
  3. 3. Cut the leek lengthwise in half or into thirds.
  4. 4. Boil water with salt and add the leek for 2 to 3 minutes. This is called blanching (cooking briefly in boiling water).
  5. 5. Drain the water and immediately rinse the leek with cold water to stop the cooking process.
  6. 6. Wrap 1 to 2 slices of ham around each piece of leek.
  7. 7. Place the wrapped leek pieces in a baking dish.
  8. 8. Whisk cream, broth, crème fraîche, eggs, and grated cheese in a bowl.
  9. 9. Season the mixture with salt, pepper, and ground nutmeg.
  10. 10. Pour the sauce evenly over the leek in the dish.
  11. 11. Bake the dish for 25 to 30 minutes in the oven until golden brown.
  12. 12. Serve the baked dish garnished with fresh chervil.
