  1. 1. Bring a pot of water and salt to a boil.
  2. 2. Add the spinach to the boiling water and cook briefly (this is called blanching).
  3. 3. Drain the spinach and let it drain well.
  4. 4. Squeeze the spinach firmly to remove as much water as possible.
  5. 5. Whisk the eggs in a separate bowl with milk and cream.
  6. 6. Season the egg mixture with salt, pepper, and grated nutmeg.
  7. 7. Roughly chop the squeezed spinach.
  8. 8. Season the chopped spinach with salt and pepper as well.
  9. 9. Grease two small molds with butter.
  10. 10. Evenly distribute the seasoned spinach into the prepared molds.
  11. 11. Carefully pour the egg mixture over the spinach in the molds.
  12. 12. Place the molds in a larger baking pan or on a deep baking sheet.
  13. 13. Pour boiling water into the large pan until it surrounds the molds to at least one-third of their height.
  14. 14. Preheat the oven to 180 degrees top and bottom heat.
  15. 15. Bake the casserole in the preheated oven for about 15 to 20 minutes.
  16. 16. Check the cooking time with a skewer: insert it in the center and if it comes out clean, the casserole is done.
  17. 17. Serve the warm casserole garnished with fresh spinach leaves.
