  1. 1. Wash the fresh spinach thoroughly.
  2. 2. Remove thick stems and wilted leaves.
  3. 3. Bring a pot of salted water to a boil.
  4. 4. Add the spinach to the boiling water.
  5. 5. Let the spinach wilt briefly.
  6. 6. Drain the spinach into a colander.
  7. 7. Rinse the spinach immediately with cold water to stop the cooking process (shocking).
  8. 8. Let the water drain well.
  9. 9. Squeeze the spinach firmly with your hands to remove excess moisture.
  10. 10. Finely chop the spinach.
  11. 11. Clean the leek (scallions or leeks).
  12. 12. Cut the leek lengthwise.
  13. 13. Wash the leek thoroughly to remove sand.
  14. 14. Cut the white and light green parts into thin strips.
  15. 15. Heat butter in a pan.
  16. 16. Sauté the leek strips in the hot butter.
  17. 17. Take a large bowl.
  18. 18. Add the chopped spinach to the bowl.
  19. 19. Add the sautéed leek strips to the bowl.
  20. 20. Crack an egg and add it to the bowl.
  21. 21. Add quark to the bowl.
  22. 22. Add grated parmesan to the bowl.
  23. 23. Mix all ingredients in the bowl well.
  24. 24. Season the mixture with salt.

  27. 27. Take a loaf pan (rectangular baking pan).
  28. 28. Grease the pan with some butter.

  32. 32. Bake the casserole for approx. 30 minutes.
  33. 33. Remove the casserole from the oven.
  34. 34. Cover the casserole with aluminum foil.
  35. 35. Let the casserole rest for another 10 minutes.
  36. 36. Slice the casserole.
  37. 37. Serve the casserole warm.
