🍽️ Crispy Spinach and Quark Patties with Crunchy Radish Salad

Ingredientes
- 200 g spinach (frozen)
- 300 g daikon radish (0.5 daikon radish)
- 1 bunch radishes
- salt
- 1 red onion
- 1 bunch chives
- 2 tbsp sweet mustard
- 4 tbsp rapeseed oil
- 2 tbsp apple cider vinegar
- pepper
- 400 g low-fat quark
- 0.5 garlic clove
- nutmeg
- 2 eggs
- 50 g whole wheat breadcrumbs
- 2 tbsp wheat flour Type 1050
- 2 tbsp olive oil
Preparación
- 1. Let the frozen spinach thaw completely.
- 2. Peel the radishes and daikon.
- 3. Wash the vegetables and grate them into thin slices.
- 4. Place the grated vegetables in a bowl.
- 5. Lightly salt the vegetables and let them sit for a moment.
- 6. Peel the onion.
- 7. Cut the onion into thin strips.
- 8. Wash the chives.
- 9. Shake the chives dry.
- 10. Cut the chives into fine rings.
- 11. Drain the water that has collected in the vegetable bowl.
- 12. Add the chopped onions and chives to the vegetables.
- 13. Whisk water, mustard, rapeseed oil, and vinegar in a small bowl.
- 14. Season the dressing mixture with salt and pepper.
- 15. Pour the dressing over the vegetables and mix everything well.
- 16. Place the quark in a clean kitchen towel.
- 17. Squeeze the quark firmly to remove excess moisture.
- 18. Peel the garlic clove.
- 19. Mince the garlic very finely.
- 20. Grate some fresh nutmeg.
- 21. Whisk the squeezed quark with the eggs.
- 22. Add the breadcrumbs to the quark-egg mixture.
- 23. Add the finely chopped garlic.
- 24. Season the mixture with salt, pepper, and the grated nutmeg.
- 25. Squeeze the thawed spinach in your hands to remove moisture.
- 26. Chop the squeezed spinach into small pieces.
- 27. Gently fold the spinach into the quark mixture.
- 28. Wet your hands with a little water.
- 29. Shape the mixture into 8 flat patties.
- 30. Coat the patties in flour until lightly covered.
- 31. Heat olive oil in a pan over medium heat.
- 32. Fry the patties for 4 to 5 minutes on each side until golden brown.
- 33. Serve the warm patties with the prepared radish salad.
