Ingredientes
- 1.5 kg carne de cerdo (de la pierna, con piel)
- Sal
- Pimienta (recién molida)
- 3 cucharadas aceite
- 3 zanahorias

- 3 cebollas grandes
- 1 hoja de laurel
- 1 cucharadita granos de pimienta negra
- alcaravea 1 cda
- 250 ml cerveza oscura
- maicena 1 cda
Preparación
- 1. Score a caterpillar-like pattern into the pork skin with a sharp knife.
- 2. Season the skin generously with salt and pepper.
- 3. Sear the meat for about 10 minutes all around in hot oil in a roasting pan.
- 4. Place the meat in the preheated oven (180 degrees Celsius).
- 5. Roast it uncovered for about 30 minutes.
- 6. Peel the vegetables and cut them into coarse pieces.
- 7. Add the vegetables along with the spices to the roast.
- 8. Let everything cook for another 90 minutes.
- 9. Baste the meat regularly with some beer during this time.
- 10. Turn on the grill function in the last few minutes to make the crust crispy.
- 11. Remove the roast from the oven.
- 12. Wrap it in aluminum foil and let it rest briefly.
- 13. Deglaze the pan juices with a little water and bring to a boil.
- 14. Season with salt and pepper.
- 15. Mix the starch with a little cold water until smooth.
- 16. Add it to the sauce and let it boil briefly.
- 17. Slice the roast for serving and serve it with the sauce.
- 18. Serve with bread dumplings or potato dumplings and sauerkraut.
