🍽️ Albóndigas picantes de pimiento con berenjenas fritas

Ingredientes
- 2 berenjenas
- aceite de oliva
- 1 panecillo (del día anterior)
- 1 diente de ajo
- 3 pimientos (rojo, amarillo y verde)
- 1 guindilla
- 600 g carne picada mixta
- 1 cucharada de menta fresca picada
- 1 huevo
- sal
- pimienta (recién molida)

Preparación
- 1. Wash the eggplants thoroughly.
- 2. Remove the stem ends.
- 3. Slice the eggplants lengthwise into about 0.5 cm thick slices.
- 4. Sprinkle the slices with salt.
- 5. Let the salted eggplants stand for about 10 minutes to draw out the water.
- 6. Preheat the oven to the grill function.
- 7. Soak the bread roll in lukewarm water.
- 8. Peel the garlic.
- 9. Finely chop the garlic.
- 10. Wash the sweet peppers and chili peppers.
- 11. Halve the sweet peppers and chili peppers.
- 12. Remove the seeds and white pith (core them).
- 13. Dice the sweet peppers and chili finely.
- 14. Set aside 1-2 tablespoons of the vegetable cubes for later garnishing.
- 15. Place the minced meat in a bowl.
- 16. Squeeze the soaked bread roll well.
- 17. Add the squeezed bread to the minced meat.
- 18. Add the diced sweet peppers to the minced meat.
- 19. Add the chopped garlic to the minced meat.

- 22. Add the egg to the minced meat.
- 23. Season the mixture with salt.
- 24. Season the mixture with pepper.
- 25. Knead all ingredients well together.
- 26. Add some breadcrumbs (small bread pieces) if the mixture is too wet.
- 27. Form small patties from the meat mixture.
- 28. Heat 4-5 tablespoons of oil in a deep pan.
- 29. Fry the patties on both sides until golden brown.
- 30. Fry the patties for about 6-8 minutes.
- 31. Pat the eggplant slices dry.
- 32. Drizzle the eggplant slices with a little oil.
- 33. Salt the eggplant slices.
- 34. Pepper the eggplant slices.
- 35. Place the eggplant slices on a baking sheet lined with baking paper.
- 36. Grill the eggplants under the grill for about 5 minutes.
- 37. Turn the eggplants once to ensure they turn golden brown.
- 38. Arrange the eggplants on plates or a platter.
- 39. Place the patties on top of the eggplants.
- 40. Garnish the dish with the reserved vegetable cubes.
- 41. Garnish the dish with fresh mint.
- 42. Serve the dish.
