🍽️ Shrimp Ravioli in Spicy Tomato Sauce

Ingredientes
- 400 ml strained tomatoes
- 2 bay leaves
- 1 tbsp sugar
- 2 tsp white wine vinegar
- salt
- 2 pinches cayenne pepper
- 20 shrimp (with shell, headless)
- 600 g fresh ravioli (with meat filling)
- 4 tbsp Dijon mustard
- 1 tbsp chopped cilantro
- 4 tbsp olive oil
- pepper (from the mill)
- 50 ml dry white wine
- cilantro (for garnish)
Preparación
- 1. Add the puréed tomatoes, bay leaves, sugar, and vinegar to a pot.
- 2. Bring the mixture to a boil.
- 3. Season the sauce with salt and cayenne pepper.
- 4. Let the sauce simmer for about 5 minutes.
- 5. Rinse the shrimp thoroughly.
- 6. Pat the shrimp dry with kitchen paper.
- 7. Cook the ravioli in boiling salted water according to the package instructions.
- 8. Whisk mustard and coriander together in a small bowl to make a sauce.
- 9. Heat the olive oil in a large frying pan.
- 10. Fry the shrimp in the pan for 1 to 2 minutes on each side.
- 11. Season the shrimp with salt and pepper.
- 12. Deglaze the pan with white wine.
- 13. Remove the pan from the heat.
- 14. Stir the prepared coriander-mustard mixture into the pan.
- 15. Place a spoonful of tomato sauce on each plate and spread it flat.
- 16. Place the ravioli on top of the sauce.
- 17. Place the shrimp on top of the ravioli.
- 18. Garnish the dish with fresh coriander leaves.
