🍰 Crêpes with Toasted Pine Nuts

Ingredientes
- 80 g flour
- 2 tbsp sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 150 ml milk
- 2 eggs (size M)
- 40 g pine nuts
- ghee (for frying)
- 6 sprigs mint
- 4 tbsp liquid honey
- limes
- 4 scoops ice cream (e.g. cherry flavor)
- mint (and lime for garnish)
Preparación
- 1. Whisk flour, sugar, vanilla sugar, salt, milk, and eggs in a bowl until you have a smooth batter.
- 2. Let the batter rest for 30 minutes to allow it to swell.
- 3. Toast the pine nuts in a dry pan until they are fragrant.
- 4. Remove a small handful of the toasted pine nuts and set them aside for garnish.
- 5. Finely chop the remaining pine nuts.
- 6. Stir the chopped pine nuts into the batter.
- 7. Cook thin crêpes in hot ghee.
- 8. Pick the mint leaves off the stems.
- 9. Finely chop large mint leaves if necessary.
- 10. Mix the mint leaves with the honey.
- 11. Slice the lime into thin rounds.
- 12. Add the lime slices to the honey-mint mixture.
- 13. Place a serving of ice cream on each plate.
- 14. Place the crêpes next to or on top of the ice cream.
- 15. Drizzle the honey-mint sauce over the crêpes.
- 16. Garnish the dish with the reserved pine nuts, fresh mint, and lime slices.
- 17. Serve the crêpes immediately.
