  1. 1. Peel the ginger and cut it into small cubes.
  2. 2. Place the ginger cubes, maple syrup, cloves, and 5 tablespoons of water in a small saucepan.
  3. 3. Bring the mixture to a boil with the lid on over medium heat.
  4. 4. Let the syrup simmer for 2 minutes.
  5. 5. Remove the pan from the heat and let the syrup cool down completely.
  6. 6. Wash the currants and gently pat them dry.
  7. 7. Use a fork to strip the berries from the stems.
  8. 8. Pour the cooled ginger syrup through a fine sieve into a cup.
  9. 9. Cut the papaya in half lengthwise.
  10. 10. Carefully remove the seeds with a tablespoon.
  11. 11. Cut a small piece off the rounded bottom of each papaya half.
  12. 12. Place the papaya halves so that they stand upright and stable.
  13. 13. Brush the inside of the papaya halves lightly with some ginger syrup.
  14. 14. Let the lemon sorbet thaw slightly so it can be shaped.
  15. 15. Scoop balls of sorbet using an ice cream scoop.
  16. 16. Place one sorbet ball into each papaya half.
  17. 17. Drizzle the remaining ginger syrup over the shells.
  18. 18. Sprinkle the prepared currants over the top.
  19. 19. Serve the dessert immediately.
