🍽️ Peanut Butter Jam Cookies

Ingredientes
- 140 g peanut butter
- 2 eggs
- 60 g whole cane sugar
- 1 tsp vanilla powder
- 270 g spelt flour Type 1050
- 0.25 tsp baking powder
- 60 g raspberry jam (4 tbsp; seedless; with 75% fruit content)
Preparación
- 1. Put 100 g of peanut butter into a bowl.
- 2. Add the eggs, sugar, and vanilla powder.
- 3. Stir the ingredients until a smooth mixture forms.
- 4. Sift the flour into a separate small bowl.
- 5. Mix the flour with the baking powder.
- 6. Add the flour mixture to the peanut butter mixture.
- 7. Knead everything into a moldable dough.
- 8. Lightly wet your hands with water.
- 9. Take small portions of the dough.
- 10. Shape them into about 30 small balls.
- 11. Place the balls on a baking sheet lined with baking paper.
- 12. Press the balls slightly flat.
- 13. Press the handle end of a wooden spoon into the center of each ball.
- 14. This creates a small indentation.
- 15. Fill the indentations with a little peanut butter.
- 16. Add some jam into the indentations.
- 17. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
- 18. Bake the cookies for 10 to 12 minutes.
- 19. Remove the tray from the oven.
- 20. Lift the baking paper with the cookies off the tray.
- 21. Let the cookies cool down completely.
