🍽️ Fresh Zucchini Salad with Herb Marinade

Ingredientes
- 400 g small zucchini
- 3 tbsp lemon juice
- 2 garlic cloves
- 2 tbsp chopped flat-leaf parsley
- 1 tbsp chopped mint
- 6 tbsp olive oil
- salt
- pepper (from the mill)
- 8 slices baguette
- mint (for garnish)
Preparación
- 1. Wash the zucchini thoroughly under running water.
- 2. Remove the tough ends from the zucchini.
- 3. Slice the zucchini diagonally into rounds about 1 cm thick.
- 4. Press the garlic or use pre-pressed garlic.
- 5. Whisk the lemon juice, garlic, chopped parsley, and chopped mint together in a bowl.
- 6. Stir the olive oil into the herb-lemon mixture.
- 7. Pour the marinade over the zucchini slices.
- 8. Toss everything well so the zucchini is evenly coated.
- 9. Let the salad marinate for about 1 hour.
- 10. Toast the bread slices until crisp.
- 11. Remove the zucchini from the marinade and arrange it on deep plates.
- 12. Garnish the salad with fresh mint leaves.
- 13. Serve the salad with the toast bread.
