  1. 1. Squeeze the limes to extract the juice.
  2. 2. Halve the avocados and remove the pits.
  3. 3. Peel the avocados and dice the flesh into approx. 1 cm cubes.
  4. 4. Mix the avocado cubes immediately with half of the lime juice.
  5. 5. Wash the peppers and remove the core (seeds and membranes).
  6. 6. Dice the peppers finely.
  7. 7. Peel the onion and cut it into small cubes.
  8. 8. Combine the peppers, onions, and avocados in a bowl and mix well.
  9. 9. Stir in the sherry vinegar, 1 tablespoon of oil, and the chopped parsley.
  10. 10. Season the salsa to taste with salt and pepper.
  11. 11. Rinse the mackerel fillets briefly and pat them dry with kitchen paper.
  12. 12. Drizzle the remaining lime juice over the fillets.
  13. 13. Brush the fillets lightly with oil.
  14. 14. Preheat the grill or a griddle pan.
  15. 15. Place the fillets on the hot grill surface.
  16. 16. Grill the mackerel for approx. 2 minutes per side.
  17. 17. Season the fillets with salt and pepper while grilling.
  18. 18. Remove the cooked fillets from the grill and place them on plates.
  19. 19. Spread the avocado salsa generously over the fillets.
  20. 20. Serve the meal with lime wedges on the side, if desired.
