🍽️ Classic Lamb Stew

Ingredientes
- 1 onion
- 1 clove garlic
- 250 g small, waxy potatoes
- 2 carrots
- 250 g celeriac
- 800 g lamb meat (e.g. from the shoulder, trimmed)
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 250 ml alcohol-free wine
- 600 ml lamb stock
- salt
- pepper
- 1 herb bundle (from 1 bay leaf, 1 sprig rosemary, 2 sprigs thyme)
Preparación
- 1. Peel the onion and the garlic.
- 2. Finely dice the onion and the garlic.
- 3. Peel the potatoes, the carrots, and the celery.
- 4. Cut the vegetables into cubes.
- 5. Rinse the meat briefly with water.
- 6. Pat the meat dry with a kitchen towel.
- 7. Cut the meat into bite-sized pieces.
- 8. Heat the oil in a pot or casserole dish.
- 9. Brown the meat over medium heat.
- 10. Add the prepared vegetables to the meat.
- 11. Sauté the vegetables lightly until they turn brown.
- 12. Stir the tomato paste into the mixture.
- 13. Deglaze the dish with the wine.
- 14. Pour in the meat stock.
- 15. Season the dish with salt and pepper.
- 16. Cover the pot halfway.
- 17. Let the dish simmer gently for approx. 1.5 hours.
- 18. Stir the dish occasionally.
- 19. Add more meat stock if necessary.
- 20. Add the herb bouquet in the last approx. 15 minutes.
- 21. Taste the dish at the end.
- 22. Serve the lamb stew.
