🍽️ Classic Onion Soup with Cheese Bread

Ingredientes
- 600 g vegetable onion
- 1 clove garlic
- 4 sprigs thyme
- 2 tbsp butter
- 150 ml dry white wine
- 800 ml meat broth
- 1 bay leaf
- 100 g alpine cheese
- salt
- pepper (from the mill)
- 12 small, narrow baguette slices
- 1 tsp caraway seeds
Preparación
- 1. Peel the onions and slice them into thin half rings.
- 2. Peel the garlic and chop it finely.
- 3. Wash the thyme, shake it dry, and pluck the leaves from the stems.
- 4. Heat the butter in a pot.
- 5. Sauté the onions and garlic until they turn lightly brown.
- 6. Deglaze the mixture with the white wine.
- 7. Pour in the broth.
- 8. Add the bay leaf and thyme leaves.
- 9. Simmer the soup uncovered on low heat for 15 to 20 minutes.
- 10. Grate the cheese in the meantime.
- 11. Preheat the oven grill.
- 12. Season the soup with salt and pepper to taste.
- 13. Remove the bay leaf from the soup.
- 14. Fill the soup into ovenproof bowls.
- 15. Top the soup with the cheese and sprinkle some cumin over it.
- 16. Gratiné the soup under the preheated grill until golden brown.
