🍽️ Refreshing cold apricot soup with semolina dumplings and yogurt

Ingredientes
- 0.5 l milk
- 1 pinch salt
- 25 g butter
- 3 tbsp sugar
- 80 g semolina
- 2 eggs
- fresh raspberries (for garnish)
Preparación
- 1. Melt the sugar in a large pot until it caramelizes.
- 2. Deglaze with the apricots and their juice, then bring the mixture to a boil.
- 3. Stir in the lemon juice and sweeten to taste with vanilla sugar.
- 4. Puree the soup until smooth.
- 5. Let it cool down and place it in the refrigerator for at least two hours.
- 6. Bring the milk to a boil together with the salt, butter, and sugar in a pot.
- 7. Add the semolina and stir constantly until the mixture thickens and forms a solid dough ball.
- 8. Remove the pot from the heat and wait briefly.
- 9. Stir in the first egg.
- 10. Let the mixture cool down slightly before stirring in the second egg.
- 11. Then let the dough rest and cool for about ten minutes.
- 12. Using two spoons, shape small dumplings from the dough.
- 13. Boil them in simmering water for four to five minutes until cooked through.
- 14. Lift the dumplings out of the water with a slotted spoon and let them cool.
- 15. Divide the cold soup among four plates.
- 16. Decorate with swirls of yogurt and place the cooled dumplings on top.
- 17. Dust everything with powdered sugar and serve.
- 18. Garnish with fresh raspberries if desired.
