  1. 1. Wash the cucumbers thoroughly.
  2. 2. Use a vegetable peeler or a slicer to shave very thin slices lengthwise from the cucumber.
  3. 3. Sprinkle the cucumber slices with salt.
  4. 4. Let the salted slices sit for about 10 minutes to draw out moisture.
  5. 5. Then pat the slices dry with a kitchen towel.
  6. 6. Stack three to four slices on top of each other in a cross shape.
  7. 7. Stir goat cheese and mascarpone together in a bowl until smooth.
  8. 8. Finely chop the shallots and stir them into the cheese mixture.
  9. 9. Add vinegar and oil to the mixture and stir everything well.
  10. 10. Finely chop the mint and fold it into the filling.
  11. 11. Finally, season the filling to taste with salt and pepper.
  12. 12. Place one large tablespoon of the filling in the center of the stacked cucumber slices.
  13. 13. Fold the cucumber slices up over the filling.
  14. 14. Secure each roll with two toothpicks.
  15. 15. Cut the tomatoes into small wedges.
  16. 16. Serve the rolls garnished with the tomato pieces and fresh mint.
