🍽️ Crispy Chicken Breast with Spinach Filling

Ingredientes
- 500 g fresh spinach
- 1 tbsp olive oil (cold-pressed)
- 4 chicken breast fillets (approx. 150 g each)
- salt
- pepper (freshly ground)
- nutmeg (freshly grated)
- 2 eggs
- 100 g breadcrumbs
- 100 g flour
- sunflower oil (for frying)
Preparación
- 1. Wash the spinach thoroughly and remove any tough stems.
- 2. Place the wet spinach in a pot with a little boiling water.
- 3. Let the spinach wilt until it is soft.
- 4. Remove the spinach and shock it immediately with cold water.
- 5. Let the spinach drain, then squeeze it firmly to remove excess liquid.
- 6. Roughly chop the squeezed spinach.
- 7. Mix the spinach in a bowl with olive oil, salt, pepper, and a pinch of nutmeg.
- 8. Cut a pocket lengthwise into the chicken breast fillets without cutting all the way through.
- 9. Season the meat inside and out with salt and pepper.
- 10. Fill each pocket with the spinach mixture.
- 11. Secure the openings firmly with toothpicks.
- 12. Whisk the eggs in a shallow dish.
- 13. Spread the flour on a second plate.
- 14. Place the breadcrumbs on a third plate.
- 15. Coat the stuffed chicken breasts in the flour first.
- 16. Gently shake off any excess flour.
- 17. Then dip the breasts into the whisked eggs.
- 18. Finally, roll them thoroughly in the breadcrumbs.
- 19. Heat plenty of oil in a large frying pan.
- 20. Place the breaded chicken breasts into the hot oil.
- 21. Fry them over medium heat for about 5 to 6 minutes.
- 22. Fry them until golden brown on all sides.
- 23. Remove the breasts and let them drain on kitchen paper.
