🍽️ Chicken Salad with Crisp Apple

Ingredientes
- 2 chicken breast fillets (approx. 150 g each)
- lemons
- 1 lemon (zest)
- 400 ml chicken stock
- salt
- pepper (from the mill)
- 3 stalks celery
- 2 apples
- 3 tbsp crème fraîche
- 1 tbsp olive oil
- 2 tbsp parsley
- 3 spring onions
- fresh salad leaves (washed and spun dry)
Preparación
- 1. Rinse the chicken breast fillets under cold water and pat them dry with a kitchen towel.
- 2. Bring the chicken broth to a boil in a pot.
- 3. Place the chicken fillets into the boiling broth.
- 4. Reduce the heat to a low setting and cover the pot.
- 5. Let the fillets cook for about 10 to 15 minutes until they are fully cooked.
- 6. Wash the celery stalks and cut them into thin strips.
- 7. Wash the spring onions and cut them into thin rings.
- 8. Wash the apples, halve them, and remove the core.
- 9. Cut the apple halves into thin wedges.
- 10. Cut the apple wedges in half crosswise to create smaller pieces.
- 11. Mix the crème fraîche with the lemon juice, lemon zest, olive oil, salt, and pepper in a bowl.
- 12. Remove the chicken fillets from the broth and let them drain briefly.
- 13. Shred the chicken meat into bite-sized pieces using two forks.
- 14. Mix the shredded meat with the crème fraîche mixture and two tablespoons of the chicken broth.
- 15. Add the chopped celery, apple pieces, spring onions, and parsley to the meat.
- 16. Gently fold all ingredients together until evenly distributed.
- 17. Cover the bowl and let the salad marinate at room temperature for one hour.
