  2. 2. Bring the chicken broth to a boil in a pot.
  3. 3. Place the chicken fillets into the boiling broth.
  4. 4. Reduce the heat to a low setting and cover the pot.
  5. 5. Let the fillets cook for about 10 to 15 minutes until they are fully cooked.
  6. 6. Wash the celery stalks and cut them into thin strips.
  7. 7. Wash the spring onions and cut them into thin rings.
  8. 8. Wash the apples, halve them, and remove the core.
  9. 9. Cut the apple halves into thin wedges.
  10. 10. Cut the apple wedges in half crosswise to create smaller pieces.
  11. 11. Mix the crème fraîche with the lemon juice, lemon zest, olive oil, salt, and pepper in a bowl.
  12. 12. Remove the chicken fillets from the broth and let them drain briefly.
  13. 13. Shred the chicken meat into bite-sized pieces using two forks.
  14. 14. Mix the shredded meat with the crème fraîche mixture and two tablespoons of the chicken broth.
