🍽️ Pan-fried Sea Bass with Mashed Potatoes and Herbs

Ingredientes
- 4 Sea bass (approx. 300 g each)
- Salt
- Pepper (from the mill)
- 4 sprigs Parsley
- Olive oil
- 2 Garlic cloves
- 2 tbsp freshly chopped Parsley
- 2 unpeeled Lemons (Zest)
- 2 tbsp Pine nuts (toasted)
- 1 tbsp Capers
- 4 tbsp Olive oil
- Lemon wedges (for garnish)
Preparación
- 1. Rinse the sea bass thoroughly under running water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Season the fish inside and out generously with salt and pepper.
- 4. Stuff the fish cavities with the parsley stems.
- 5. Heat some oil in a non-stick frying pan.
- 6. Place the fish in the hot pan.
- 7. Fry the fish slowly on the first side for 6 to 8 minutes until golden brown.
- 8. Carefully turn the fish over.
- 9. Fry the fish on the second side for another 6 to 8 minutes until golden brown.
- 10. Peel the garlic clove and chop it very finely.
- 11. Grate the lemon zest (the outer colored skin) from the lemon.
- 12. Mix the chopped garlic, chopped parsley, lemon zest, pine nuts, and capers in a bowl.
- 13. Add some oil to the herb mixture and stir everything well.
- 14. Place the cooked fish onto the serving plates.
- 15. Distribute the herb mixture (gremolata) evenly over the fish.
- 16. Garnish the dish with lemon wedges and serve immediately.
