🍽️ Oven Roast Chicken with Figs and Pine Nuts

Ingredientes
- 1 chicken (approx. 1.2 kg)
- 200 g shallots
- 5 tbsp olive oil
- salt
- pepper (from the mill)
- 1 clove of garlic
- 1 sprig rosemary
- 2 stalks parsley
- 150 ml dry white wine
- 8 figs
- 40 g pine nuts
- 1 tbsp honey
Preparación
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Wash the chicken and pat it dry with a kitchen towel.
- 3. Peel the shallots and the garlic.
- 4. Slice the shallots.
- 5. Slice the garlic into rings.
- 6. Place half of the shallots into a roasting pan.
- 7. Drizzle 3 tablespoons of oil over the shallots in the roasting pan.
- 8. Season the shallots with salt and pepper.
- 9. Season the chicken inside and out with salt and pepper.
- 10. Stuff the chicken with the remaining shallots, garlic, and herbs.
- 11. Brush the outside of the chicken with 2 tablespoons of oil.
- 12. Place the chicken on top of the shallots in the roasting pan.
- 13. Pour the wine over the chicken.
- 14. Roast the chicken in the oven for about 45 minutes.
- 15. Add a little water if necessary.
- 16. Baste the chicken occasionally with the pan juices.
- 17. Wash the figs.
- 18. Cut the figs into wedges.
- 19. Add the fig wedges and pine nuts to the roasting pan.
- 20. Brush the chicken with honey.
- 21. Finish cooking the chicken and ingredients for another 15 to 20 minutes.
- 22. Increase the oven temperature if necessary to brown everything nicely.
