🍰 Moist Chocolate Cake with Apricot Glaze

Ingredientes
- 200 g Sugar
- 8 Eggs
- 80 g Cocoa powder
- 120 g Flour
- 100 g Butter
- 50 g Breadcrumbs
- 1 cup Apricot jam
- 300 g Dark chocolate coating
- Butter (for the pan)
- Chocolate shavings (scrape from a chocolate coating block with a sharp knife)
Preparación
- 1. Separate the eggs. Beat the egg yolks with 100 grams of sugar until creamy.
- 2. Beat the egg whites with the remaining sugar until very stiff.
- 3. Sift the cocoa powder and flour over the egg yolk mixture.
- 4. Melt the butter and add it to the mixture.
- 5. Stir everything gently.
- 6. Fold the egg whites into the mixture.
- 7. Fold the breadcrumbs into the batter.
- 8. Grease a springform pan and pour in the batter.
- 9. Bake the cake at 200 degrees for 40 minutes.
- 10. Turn the cake out onto a rack and let it cool.
- 11. Let the cake rest for at least 6 hours.
- 12. Spread the apricot jam all around the cake.
- 13. Melt the chocolate coating in a double boiler.
- 14. Pour the melted chocolate evenly over the cake.
- 15. Sprinkle the cake with chocolate shavings.
