  2. 2. Whip the egg whites until stiff and gently fold them into the batter. Bake 12 thin pancakes and keep them warm. Wash the blackberries, remove any stems, and let them drain. Whip the coffee cream until stiff, add the powdered sugar, and beat it firmly again.
  3. 3. Fold the blackberries into the cream. Spread 2 to 3 tablespoons of the mixture onto each pancake and fold them gently.
