🍽️ Salmon with Basil Pesto Spaghetti

Ingredientes
- 500 g Spaghetti
- Salt
- 2 handful Basil
- 2 Garlic Cloves
- 50 ml Olive Oil
- 40 g Pine Nuts
- 40 g Parmesan (freshly grated)
- 6 Dried Tomatoes
- 4 Salmon Fillets (approx. 120 g each)
- 1 tbsp Butter
- 100 ml Heavy Cream
- Basil (for garnish)
Preparación
- 1. Fry the salmon in a grill pan over medium heat on both sides. This takes a total of 6 to 8 minutes. Season the fish with salt and pepper beforehand. Pat it dry with kitchen paper first.
- 2. Cook the spaghetti in plenty of boiling, salted water. Cook the pasta until al dente, as indicated on the package. Drain the water and let the pasta drain well.
- 3. Wash the fresh basil and shake it dry. Peel the garlic and cut the cloves into quarters. Crush the basil, garlic, pine nuts, and Parmesan in a mortar. Stir in the olive oil until a fine pesto forms.
- 4. Cut the sun-dried tomatoes into thin strips. Heat the butter in a non-stick pan. Add the drained spaghetti and warm it while stirring.
- 5. Stir the cream into the pan. Let the pasta mixture simmer lightly for 1 to 2 minutes. Remove the pan from the heat. Stir the pesto into the pasta. Season with salt and pepper.
- 6. Plate the spaghetti on plates. Place the fried salmon fillets on top. Garnish the dish with the sun-dried tomato strips and fresh basil leaves.
