Ingredientes
- 16 fresh flowers (from the acacia)
- 2 eggs
- 2 tbsp whole cane sugar
- 200 g spelt whole grain flour
- 250 ml milk (3.5% fat)
- vegetable oil (for frying)
Preparación
- 1. Separate the eggs carefully so that the egg whites and yolks are distinct.
- 2. Whisk the egg yolks with the cane sugar until creamy and airy.
- 3. Beat the egg whites until stiff peaks form.
- 4. Add the flour and milk to the egg yolks while stirring constantly until a smooth batter forms.
- 5. Gently fold the egg whites into the mixture.
- 6. Heat plenty of oil in a pot for deep frying.
- 7. The oil is ready when small bubbles rise around a wooden stick (e.g., a spoon handle) that you dip into the fat.
- 8. Dip the acacia flowers into the batter and fry them in the hot oil until golden yellow.
- 9. Remove the flowers from the oil and let them drain on kitchen paper to absorb any excess fat.
