  2. 2. Crush the smoked salmon finely in a bowl.
  3. 3. Mix the crushed salmon mass with the beaten eggs.
  4. 4. Stir the crème fraîche into the salmon-egg mixture.
  5. 5. Mix the cream into the mass.
  6. 6. Peel off the green tips of the spring onions generously.
  7. 7. Finely chop the rest of the spring onions.
  8. 8. Stir the chopped spring onions into the salmon mixture.
  9. 9. Add some lemon juice.
  10. 10. Season the mixture with salt.
  11. 11. Season the mixture with pepper.
  12. 12. Fill the salmon mixture evenly into four small, ovenproof ramekins.
  13. 13. Place the four ramekins in a large baking dish.
  14. 14. Pour boiling water into the large baking dish.
  15. 15. Make sure the water stands about 3 centimeters high around the ramekins.
  16. 16. Bake the baked dish in the preheated oven for about 30 minutes.
  17. 17. Check if the mass is firm.
  18. 18. Turn out the baked dish from the ramekins as desired.
