  2. 2. Finely chop the onion and garlic.
  3. 3. Heat the olive oil in a large pot and sauté the onion and garlic for 3 minutes until translucent.
  4. 4. Add the zucchini cubes and sauté for another 5 minutes.
  5. 5. Pour in the vegetable broth and bring to a boil.
  6. 6. Stir in the polenta slowly until dissolved.
  7. 7. Let the stew simmer for 10 minutes until the sauce thickens.
  8. 8. Stir in the frozen spinach and let it wilt for 2 minutes.
  9. 9. Serve the stew hot topped with grated Parmesan.
