  1. 1. Wash the zucchini and slice it thinly. Boil the potatoes in salted water until tender, peel them, and cut them into cubes.
  2. 2. Cut the mozzarella into small cubes and chop the basil roughly.
  3. 3. Whisk the eggs in a large bowl with salt and pepper. Gently fold in the zucchini, potatoes, mozzarella, and basil.
  4. 4. Heat the olive oil in a non-stick frying pan over medium heat. Pour the egg mixture into the pan and smooth the surface.
  5. 5. Cook the frittata over medium heat for 10 minutes until the bottom is golden brown and the edges are set. Turn on the grill and cook for 5 minutes until the top is set.
  6. 6. Remove the frittata from the pan, let it rest for 5 minutes, and cut it into squares for serving.
