  1. 1. Wash the zucchini and cut it into thin sticks (batons).
  2. 2. Peel the mango, cut the flesh off the pits, and dice it into pieces approx. 1 cm in size.
  3. 3. Wash the arugula and dry it well.
  4. 4. Lightly season the zucchini sticks with salt and pepper and let them stand for 5 minutes (timer: 5).
  5. 5. In a small bowl, whisk together the olive oil, lime juice, honey, and finely chopped mint to make a dressing.
  6. 6. Remove excess moisture from the zucchini with a kitchen towel.
  7. 7. In a large bowl, toss together the zucchini, mango, arugula, and dressing.
  8. 8. Serve the salad chilled immediately.
