  1. 1. Preheat the oven to 200 degrees Celsius (conventional heat).
  2. 2. Wash the zucchini and slice it into 5 mm long strips using a vegetable peeler.
  3. 3. Grease a baking dish with some olive oil.
  4. 4. Cut the salmon into coarse cubes and mix with cream cheese, grated lemon zest, salt, and pepper.
  5. 5. Form a layer of zucchini sheets in the baking dish, cover with the salmon mixture and sprinkle with Parmesan.
  6. 6. Repeat the layers until all ingredients are used, ending with a layer of zucchini.
  7. 7. Place the baking dish in the oven and bake for 25 minutes.
  8. 8. Let the dish rest for 5 minutes before serving.
