  1. 1. Wash the zucchini and slice them into thin lengthwise strips (approx. 3 mm thick). Sprinkle with salt and pepper and let them sit for 10 minutes to draw out water.
  2. 2. Finely chop the onion and sauté it in olive oil in a large pan. Add the beef mince and brown it.
  3. 3. Stir in the tomato paste, add the passata, and let the sauce simmer for 15 minutes. Season with salt and pepper.
  4. 4. Preheat the oven to 200 degrees Celsius. Pat the zucchini slices dry with kitchen paper.
  5. 5. Cut the mozzarella into cubes. Layer in a baking dish: sauce, zucchini, mozzarella, repeat until finished.
  6. 6. Sprinkle the top layer with grated parmesan and fresh basil leaves.
  7. 7. Bake the lasagna for 25 minutes in the oven until the cheese is golden brown.
