🍲 Zucchini Lasagna with Beef Mince

Ingredients
- 400 g Zucchini
- 400 g Beef mince
- 2 EL Tomato paste
- 500 ml Passata (strained tomatoes)
- 200 g mozzarella
- 50 g Parmesan
- 1 Stk Onion
- 2 EL Olive oil
- 1 Prise Salt
- 1 Prise Pepper
- 10 Blätter Basil
Instructions
- 1. Wash the zucchini and slice them into thin lengthwise strips (approx. 3 mm thick). Sprinkle with salt and pepper and let them sit for 10 minutes to draw out water.
- 2. Finely chop the onion and sauté it in olive oil in a large pan. Add the beef mince and brown it.
- 3. Stir in the tomato paste, add the passata, and let the sauce simmer for 15 minutes. Season with salt and pepper.
- 4. Preheat the oven to 200 degrees Celsius. Pat the zucchini slices dry with kitchen paper.
- 5. Cut the mozzarella into cubes. Layer in a baking dish: sauce, zucchini, mozzarella, repeat until finished.
- 6. Sprinkle the top layer with grated parmesan and fresh basil leaves.
- 7. Bake the lasagna for 25 minutes in the oven until the cheese is golden brown.
