🍋 Lemon Ricotta Pie with Meringue

Ingredients
- 100 ml Lemon juice
- 2 Stück Lemon zest
- 80 g Sugar
- 3 Stück Eggs
- 250 g Quark (low fat)
- 1 Stück Pre-baked pie crust
- 4 Stück Thin lemon slices
Instructions
- 1. Preheat the oven to 180 degrees Celsius (top/bottom heat).
- 2. Finely grate the lemon zest and squeeze the juice.
- 3. Separate the eggs. Whip the egg whites until stiff and fold them in later.
- 4. Mix the quark, egg yolks, lemon juice, zest, and sugar until smooth.
- 5. Gently fold the stiffly beaten egg whites into the quark mixture.
- 6. Pour the mixture into the pre-baked pie crust.
- 7. Bake the pie for 30 minutes in the oven.
- 8. Allow the pie to cool completely before serving.
